When it’s hot outside, the last thing you want is to be eating something warm. Fortunately, there are plenty of delicious meals out there you can eat without ever having to turn the oven on. If you don’t believe us, then hopefully the sound of these recipes will change your mind.

Shrimp ceviche-stuffed avocados

Avocados are such a major food craze right now, and we can see why. They go great with a lot of things, especially in this weather. If you want a quick and easy dish to make that will satisfy your avocado cravings, this is the one for you.

All you have to do is cut some avocados in half, remove the skin and pit, then drizzle them in lime juice. Mix a pound of chopped shrimp, some onion, chili and cilantro together in a bowl, then add a splash of lime juice. After this has sat for 10 minutes, simply pour in half a cup of orange juice, two tablespoons of vegetable oil, and then you’re good to go. Just spoon that mixture into the hollow parts of your avocados, and you’ve got lunch sorted.

Mediterranean tuna lettuce wraps

If shrimps aren’t your preferred fish, what about tuna? You don’t have to be a cat to enjoy this fishy treat, especially with all the flavor combinations at work here.

As with the previous dish, all that’s really required here is to mix all your ingredients together and then spoon it onto your base (which in this case is a piece of lettuce). You’ll need a can of tuna, several bell peppers, half a red onion, half a cup of olives and feta cheese, and some lemon juice. You can also add tablespoons of dijon mustard, olive oil and fresh mint if you fancy. Once everything is thoroughly mixed together, all that’s left to do is enjoy it.

Kale, avocado and hummus wrap

Wraps make for great on-the-go meals because they’re so easy to prepare and usually taste great. If you want something that’s a little different, why not use kale, avocado and hummus as your main ingredients. They provide plenty of protein and will do away with those hunger pangs, allowing you to keep your energy up throughout the afternoon.

There’s really not much you need to know to prepare this meal. All it involves is getting all the ingredients together (which can also include some green onions, sunflower seeds and cucumber if you so wish) and laying them out on the tortilla wrap. The tricky part comes with crafting the wrap, although that’s a skill we’ve yet to master fully.

Want some color in your dishes. Then you should probably give this recipe a go. It says it all in the name really. There are two steps to this pad thai – the food and the dressing. For the former, you’ll need carrots, a red pepper, a zucchini, some red cabbage, green onions, frozen edamame and sesame seeds. Lump these together in a bowl and mix, preferably using your hands. For the dressing, do the same (though using a whisk) with a garlic clove, lime juice, water, almond butter, maple syrup, sesame oil and grated ginger. Then, simply combine the two and let your taste buds go crazy.

Summer abundance salad

It wouldn’t be a cold recipe post without mentioning a salad somewhere. This recipe features chickpeas, basil pesto, quinoa, cherries, blueberries, a nectarine, corn, cherry tomatoes, feta cheese, an avocado and toasted nuts for one crazy flavor combination.

As you’d probably expect, most of the prep just involves pouring everything into a bowl and mixing. First, though, stir the pesto and chickpeas together and leave for 15 minutes. It will allow the latter to absorb more of the flavor, which you’ll be thankful for later. Our appetites aren’t always as strong in the heat, but these dishes ought to have your stomach rumbling.
